Chef John’s Note: Not only did the recipe taste amazing, it was also better than any traditional chicken Parmesan I had ever made. When you consider it’s lower in fat, takes about 10 minutes to put together, it’s no wonder why this is my new favorite recipe.

Janet’s Note: I’ve never used a video recipe before, but the instructions were so good, and the chef was so calm and likeable, and this recipe is so easy that I’m actually trying it tonight. I’ll add a note later tonight about how it turns out.
Update: I’m definitely adding this to the list of “regulars.” Very tasty and incredibly easy!! A keeper!

Make a big batch of your favorite cookie dough, scoop onto cookie sheets and freeze. When they are frozen solid put them in freezer bags. When you NEED cookies, bake as few or as many as you NEED without lots of waste or guilt. Just add 1 to 2 minutes to the cook time.
You can also make “slice-and-bake” cookie dough by shaping it into a cylinder, and freezing it wrapped in foil.
